| Mexican Soup. First, I'll say that this recipe is extremely versatile and allows for a lot of creativity, flexibility, and personal tastes. You will need: 2 cans tomato soup, plus 2 cans water 2 bouillion cubes 1 can black beans, drained 1.5 cup frozen/1 can corn 1 bunch cilantro, defoliated 3 cloves garlic, chopped 3 tablespoons chives, roughly chopped 1 small onion, chopped 3 bell peppers (any color you choose), chopped 1 large tomato, chopped 3 (or more) jalapeno peppers 1 tablespoon lime juice 1 tablespoon olive oil A LOT of chili powder A few dashes of your favorite hot pepper sauce Dash cumin 2 tablespoons sofrito (frozen, fresh or jarred) if available regionally Saute garlic, onions and peppers in bottom of soup pot in some oil, with some chili pepper. When onions are translucent, add the rest of the ingredients, cover and cook over low heat for about a half hour. Serve!
